Change is coming to Lakeside’s dining scene.
Officials with Realty Capital Management announced Monday morning that Craft Pies Pizza Company will move into the space occupied by Paradise Bistro Coffee Co. since February 2016.
“We are very excited,” said Brad Robinson, co-founder and chief executive of the fast-casual pizza restaurant chain, “to offer our pizza experience in Lakeside.”
He expects to complete remodelling the space and open for business by the end of the second quarter of 2019.
That experience, according to Robinson, will feature a high-quality pizza (with unlimited fresh toppings) at under $10 delivered by a staff determined to value and understand their guests.
“We think people in and around Lakeside will associate Craft Pies with happiness, great food, family experiences, and a bit of magic,” Robinson said.
“Our people and culture distinguish us.”
In line with the fast-casual model that is revolutionizing the restaurant business, guests will line up to order their custom personal-sized pizza.
They will select, in order, the dough (select from two), the sauce (select from six), the cheese (four choices), the meats, and finally, the veggies (an unlimited variety for one price).
The pizza is cooked in under 4 minutes and delivered to the guest within minutes of ordering.
Craft Pies will offer beer and wine along with Dublin soft drinks, custom salads, cookies and brownies.
Many will miss Paradise Bistro & Coffee Co., which originally opened in February 2016.
“We enjoyed serving the community,” said Aaron McDaniel, a co-owner of Paradise (with his brother and father) as well as a Lakeside resident. “We are proud to be part of Lakeside’s growth as a community and are bullish on the years ahead.
“Lindsay and I aren’t going anywhere,” he added.
“We are very grateful to the McDaniel family for their investment in Paradise Bistro and in Lakeside,” said Jimmy Archie, managing partner of Realty Capital Management, the master developer of Lakeside DFW.
“Paradise played a key role in building the community and making the live/work/play lifestyle a reality in Lakeside. The presence of Paradise gave residents a place to dine for breakfast, lunch, and dinner.”
The Lakeside location of Craft Pies Pizza Co. will be the second to open (a third is set to open in Durant, Oklahoma, in the late summer of 2019).
The Pottsboro store (located within a couple miles of Lake Texoma) was opened in February of 2018 after Robinson and two partners took over a store that had gone out of business.
“There was a pizza oven and vent hood in place,” Robinson said. “So, we decided to fulfill our entrepreneurial dream.”
“None of us had made pizza before,” he explained, “but we searched the fastest growing restaurant segments and settled on a fast-casual concept.
“We decided to offer a more unique pizza experience.”
Customers give Craft Pies Pizza Co. high marks on Google, Yelp, and other web sites.
“We are very particular about curating our ingredients,” Robinson added, “and that helps us offer a high quality, fresh product.”
“We also emphasize the experience at Craft Pies. We want our guests to feel valued and understood.”
Lakeside diners expect no less.
