Flower Mound resident Paulo Novaes is talking excitedly about Carvao Prime Brazilian Steak House.
The food, the drink, the ambiance, specific customers he’s determined to attract, and construction details (like the huge custom-made grills coming from Brazil).
Novaes and wife Cecilia expect to begin greeting customers in their 6,400 sq. ft. space in Building One at The Shops at Lakeside by September.
White table clothes, Novaes suggested, will set the tone for an environment in which customers will feel comfortable having a beer, enjoying the extensive selection of wines, or sampling Brazilian-style cocktails.
“We’re going for classy,” he smiled, “not fancy.”
Carvao will feature an extensive salad bar, including cold cuts and seafood.
“Our intention is to satisfy every customer,” Cecilia emphasized.
As for the menu, Carvao will mirror its owners — genuinely Brazilian but full of American ingenuity.
“We will have all the Brazilian cuts and our gauchos will circulate through the tables in traditional Brazilian rodizio style.”
Novaes, who originally came to the US from Brazil 17 years ago, brings a lot of business savvy to his new venture.
But most of that experience was gained in the construction business. For the last 14 years, he’s owned and operated fn contractors.
About four years ago, the urge to start a Brazilian steak house grew, as did his desire to spend more time at home with Cecilia and his two children (one at Flower Mound High School and one at Donald Elementary.)
“Opening a Brazilian restaurant is something Cecilia and I have talked about for years,” he said. “We are grateful to be able to bring Carvao to Flower Mound.
“I knew we would need to surround ourselves with successful people,” he explained, “so I started to look for the right staff.”
Then there was the matter of a location.
“Nothing caught my eye until I heard about Lakeside,” he said. “It is perfect. The community feel and walkability. Flower Mound is my home and I think the town needs something like Lakeside, and like Carvao.”
“Now, we have finalized our staff that combined has over 250 years of experience in the business of running a Brazilian steak house.
“We start on the finish-out in a week or so,” he added. “I feel very comfortable with that part of the business. I’ve built a few Brazilian steak houses before.
“Starting a restaurant is a risky business,” Novaes acknowledged. “It is exhilarating. I am so pumped.
“I haven’t been this excited in 10 years.”

Paulo and Cecilia – you are going to be great here in Lakeside. Our Lakeside residence is under construction, but we’ll be there on opening day.
To the other comment, price is always a consideration with Brazilian steak houses. Its just a matter of whether we’ll be in twice a month for a community vibe or twice a year with our family for special occasions. Whichever strategy you choose, we wish you all the best as part of the community!

How will it compare to Fogo de Chao and Estillo Gaucho and Texas de Brazil price wise?
Problem with this type- is I can NEVER eat our money’s worth. But we love our steaks!
